puurchocolat.com

We have finally launched!!!
It has only taken us three years from start to launch.....But we have finally done it.
We couldn't be more proud of what we have accomplished so far with limited resources, Definitely would not have been possible without the help of Family and Friends. All who have been so supportive with positive feedback, ideas and suggestions.

Now comes the fun and exciting part, time to start creating again!!

Food!

it's a hard call to judge somebody's music. you can't climb inside of their heart and see where

their heart really is, but you can look at how people interact with each other and how people

treat other people - Atmosphere

Financial Management

I should just leave it at that. I really dislike having to deal with money, and for some reason as I am doing my financial management the total cost to start doing business continues to go up. I really really really really don't like that. At least I have really nice camera now :)

Decisions

Be them options or decisions, its kind of nice that I have allowed myself the freedom to make my own. Though sometimes, it may be more beneficial in the overall sight of things to have a team to come together to make decisions collectively. My business is currently very small, so I am actually quite enjoying this creative freedom to choose and pick what I need. Current options, What camera with what lenses???

5weet & Savory

My good friend and fellow amazing pastry talent Carlos Enriquez and I recently had the privilege to host an amazing event called 5weet & Savory. It was an event Carlos and I thought of a few months back, with the main idea of being a great chance to show the City of Los Angeles that Pastry Chefs are more than just beautiful people that have a special talent in weighing ingredients accurately. We wanted to showcase the rise of the talent level of the Pastry Chef, the creativity, the precision, the way we balance flavors and textures not just with Sweet, but with Savory as well. We wanted to learn from other top pastry chefs in the area, get out of our everyday settings and away from Savory Chefs, but most importantly have fun!!!

It was definitely a good time, filled with Great Chefs, Amazing Mixologists, One amazing FOH manager, Friends, Family, and of course the Amazing Guests who sat through 4 hours of cocktails, 5 Savory courses, 5 Sweet Courses, and Mignardise. The Event was a success, but with some flaws that will need to be ironed out, organized and fine tuned a bit so when we come back with the next 5weet & Savory; the event will be bigger, better, and even more Fun!!! A special Thanks to all the participating Chefs, Mixologists, and sponsors who took part in the first 5weet & Savory:

David Rodriguez - Providence Restaurant
Kei Hasegawa - Matsuhisa
Waylynn Lucas - Fonuts
Carlos Enriquez - Pastry Solutions
Devon Espinosa - Pour Vous

Time!!!

I have found that its time. Time for me to start working for myself. Realizing this, has made me scared, nervous, excited, happy; pretty much about any feeling you could possible have, I have at this moment. More than anything, I am thrilled to be in a position to open something that I can call my own.
To track this change in my professional career, I am documenting it. Providing thoughts on food, the start up of the business, pictures of the products and recipes. I will be back soon, its Time to find a location.
